Clean Eating - Quinoa and Stewed Lentils

Stewed Yellow Lentils

Ingredients:

1\2 cup yellow lentils
1 onion, diced
2 cloves garlic, minced
1 tsp ginger, grated or minced
1 tbsp curry powder
1 tsp cumin
1 tsp salt
1 tsp pepper
1 tsp olive oil

Instructions:

Heat a medium sized sauce pan over high heat

Add the olive oil and onion, fry until softened

Add the garlic, spices and lentils, stir until coated

Cover with water and bring to a boil

Reduce heat to simmer and cook until lentils have softened


Quinoa

Ingredients:

1\2 cup organic quinoa
3\4 cup water
1 tsp salt

Instructions:

Combine ingredients in a small saucepan and bring to a boil

Reduce heat to simmer and allow to cook until water in completely absorbed

Allow to sit for fifteen minutes and then fluff with a fork


Pictured below drizzled with olive oil and served with steamed green beans, carrots and cucumbers
