Clementine Tea Loaf - Recipe by Fabulous Faith

I know it's the holiday season when I spot crates of delicious clementines in the grocery store.  Besides being the perfect portable snack, clementines take bake goods to a mouth-watering higher level.

This sweet buttery cake's flavor is enhanced by pungent and slightly acid rich clementine zest and juice.

Clementine Tea Loaf - Recipe by Fabulous Faith
 Ingredients:

2 cups all-purpose flour
1 cup milk

1/2 cup softened butter
1/2 cup white sugar
1 egg
1 tbsp. vanilla extract
Juice of half a ripe clementine
Zest of one clementine (put aside a few strands for the glaze)
1/2 tsp. salt
2 tsp. baking powder

Glaze:
Juice of half a ripe clementine
A few strands of clementine zest
1/8 cup water
1/2 cup sugar 


Instructions:

Preheat oven to 350 degrees, grease two mini loaf pans
 
In a large bowl, cream sugar, butter & egg until smooth

Add the vanilla, clementine juice, zest, salt and baking powder, whisk until smooth

Pour in the flour in half cup intervals alternating with the milk, stir until combined

Spoon half the batter into each prepared pan and bake for 30 - 45 minutes or until golden brown and doubled in size

Remove the cakes from the oven and set aside

In a small saucepan, combine glaze ingredients and bring to a boil

Continue to boil for 2-3 minutes and then remove from heat

Take a long skewers and poke a bunch of holes into the warm cake

Using a pastry brush, brush the cake with the syrup pushing into the holes

Allow to sit 30 minutes to one hour before serving

Recipe yields 12 generous servings

Recipe - Easy Balsamic Chicken Bake


Balsamic Chicken Bake


Ingredients:

2 large (or 4 small) frozen boneless skinless chicken breasts (I used frozen Italian pre-seasoned)
4 baking potatoes, washed and cut into wedges
4 tbsp. Calorie-Wise Kraft Balsamic
2 tsp. oregano
2 tsp. crushed chilies
2 tbsp. olive oil

Instructions:

Preheat oven to 400 degrees

In a large baking dish arrange the chicken breasts and potato wedges

Combine remaining ingredients in a small bowl and stir to combine

Slowly pour over the chicken and potatoes

Bake for 45 minutes or until golden brown

Recipe yields 4 generous servings

Easy Homemade Mac & Cheese Recipe by Fabulous Faith

Ingredients:

1 - 450 g. package Cut Macaroni
2 tbsp. Butter
2 tbsp. Flour
Pinch Salt & Cayenne
1 1/2 cups Milk
1/2 cup grated cheddar cheese


Instructions:

Boil water and cook the macaroni as per package instructions.

In a non-stick pan, melt butter completely.

Sprinkle the flour, salt and cayenne over the butter and whisk until combined and thickened.


Add the milk slowly while continuing to whisk.  

Once the milk is completely combined add the cheese and whisk until smooth and melted. 

Pour the cooked macaroni into the sauce and stir gently until completely coated.

Recipe yields four generous portions.

*Note:

If the sauce is too thick save a little of the water from the pasta and thin it out. The sauce should be the same consistency as tomato sauce.

Lentil Couscous Pilaf - Vegan Recipe by Fabulous Faith


Lentil Couscous Pilaf


Ingredients:

1 cup dried green lentils
1 cup couscous
1 sweet potato
1/2 small onion
2 tbsp olive oil plus drizzle
2 tbsp of fresh chopped parsley, dried cranberries & almonds 
1 tbsp curry powder


Instructions:

Fill your kettle with water and bring to a boil

Pour the lentils into a small saucepan and cover with water, bring to a boil and then reduce the heat to medium low and simmer the lentils for 10 minutes or until they are fully cooked.

Peel the sweet potato and slice into bite-sized pieces place into a non-stick pan and heat over medium high heat.

Once the pan is hot add the onions and olive oil and toss to coat, leave the onions and sweet potatoes to brown for 2 minutes on each side and then add the curry powder and toss to coat.

Pour the couscous into a small bowl and drizzle with a few drops of olive oil, once the kettle is boiling pour boiling water over the couscous until completely covered and then cover the bowl with a plate and allow to sit for 10 minutes covered.  Once ready fluff gently with a fork.

Once the lentils are cooked drain and combine with the remaining ingredients in the pan with the onions and sweet potatoes, toss gently and serve.

Recipe yields 6 side dish size servings or 3 entree portions.

Wine-on-tap? Don't mind if I do! I tried freshTAP and here's my review


Wine bottles, the gift and the curse. Filled with the magical elixir that has been cherished since basically the beginning of time and yet always issues.  Although we are basically done with the pesky cork, there are still so many to choose from: the tragedy of wasted leftover wine, the storage space required, the yucky alcoholic like smell that lingers in the air and then of course the environmental impact of producing and recycling.

What to do, what to do. Well it’s 2015 and now that we are officially back to the future there is revolutionary news in the wine world.  Ok I’ll get to the point,  freshTAP has created premium wine-on-tap (pause and take a minute to allow your mind to enjoy childish thought’s like laying down and drinking from a magical wine fountain.)

I saw this fountain and drank from it so now obviously I have daily fantasies of kitchen reno’s and returning home after a long day to my own spout of love-juice.  Unfortunately, we live in a world where the powers that be have yet to grant us the gift of luxurious wine fountains at home, although they will soon as I plan on pleading them with the incentive that my creativity will be increased ten-fold there granting me the opportunity to make tons of taxable income for us to mutually enjoy.

So what do we want?  freshTAP!  When do we want it?  Now!  Why?  Because we Canadians want smarter, fresher and friendlier wine!

Gluten-Free Chicken Fettucine - with Catelli Pasta



Ingredients:

1 package Catelli GF linguine

1/2 cup milk
1/4 cup heavy cream
2 tbsp. butter
1 small onion
2 cloves garlic
1 tsp crushed chili’s
1/2 pint cherry tomatoes
4 leaves fresh basil

2 large boneless skinless chicken breasts
2 tbsp. olive oil
Salt & Pepper

Instructions:

Bring a large pot of water to a boil and cook pasta as per package directions.
Heat a large non-stick pan over medium heat.

Cut the chicken breasts into one-inch cubes.

Pour the olive oil into the pan along with one tablespoon of butter.

Swirl around until the butter is melted and bubbling, add the crushed chili's and swirl the pan again.

Add the chicken breasts and cook for 2 minutes and the toss gently and cook for an additional two minutes.

In the meantime, chop up the onion and garlic and add them to the pan, stir to combine.

Cook for one minute and then season with salt and pepper and add the cherry tomatoes, cook for an additional minute.

Pour the cream and milk into the pan and stir again.

Allow the mixture to simmer for 3 - 5 minutes or until thickened.

Drain pasta and add to the sauce with the torn basil, toss to combine.

Serve immediately.

Recipe yields 4 generous servings.

Fat-Free Mini Omelets with Circulon Prime Cookware by Fabulous Faith

What's for breakfast?  The morning conundrum! Even more complicated for calorie counters. The quick and easy solution?  Circulon Prime Cookware featuring a 3-layer non-stick system which allows you to skip the oil or butter and create awesome fat-free breakfasts like this one.

Fat-Free Mini Omelets with Circulon Prime Cookware


Ingredients:

1 cup tap water (for poaching)

1 cup whipped egg whites

2 tablespoons of each:
White onion, thinly slices
Green Peppers, thinly sliced
Red Peppers, thinly sliced
Fat-free sliced turkey breast

1 each:
Kalamata Olive, pitted and sliced
Green Olive, pitted and sliced

Instructions:

Pour the water gently into your Circulon deep skillet.

Heat your Circulon deep skillet, covered over medium high heat.


 Prepare the toppings and place close to the skillet for easy access.


 Wait for the water in your Circulon deep skillet to begin to boil.

Place the non-stick egg poacher into your Circulon deep skillet once the water is boiling





Fill each cup with your families favorite toppings



Pour the whipped egg whites gently into each cup and fill up to the top.  Sprinkle some salt & pepper onto the top of each cup. Cover with lid and allow to steam for 5 minutes.


Once the egg whites have set completely (press the back of a spoon into the middle to test, if liquid comes out return the lid and continue to cook and additional minute)  remove from pan and serve.



These fat-free mini omelets can be served on English muffins, toast or even in between tomato slices if you are watching your carbs or gluten!  Add a dash of hot sauce if you like a little kick :)

Lunch Meal Prep - Chicken Greek Salad

Chicken Greek Salad - Meal Prep


Ingredients:

5 medium sized tupperware containers

1  large head of romaine lettuce, washed and torn
1 pint cherry tomatoes
1 medium sized cucumber, halved and sliced
100 grams feta cheese, crumbled
1 tsp. oregano

1/2 cup greek feta and oregano dressing, divided in small containers

1 tbsp. olive oil
1 large chicken breasts seasoned with  a pinch of oregano, crushed chilies, salt  & pepper

Instructions:

Heat a small non-stick pan over medium high heat.

Add the olive oil and swirl around in the pan to coat the bottom.

Add the chicken breast and brown for 5 minutes on each side.

Remove the chicken from the pan and put on a plate and set aside.

Layer the lettuce in the bottom of the containers, top with the tomatoes and cucumbers.

Crumble the feta over the the veggies and sprinkle a little oregano on top.

Cut the chicken into bite sized pieces and allow to cool completely.

Once cool divide the chicken amongst the containers and add a small serving of dressing in a small separate container.

Cover and refridgerate for up to 3 days.

Recipe yields 5 entree sized servings.

**Note - This is a family friendly recipe, for adults I recommend adding olives and sliced red onions

Circulon Canada - Roast Beef with Fall Vegetables Recipe

A Healthy and Delicious One-Pot Meal using Circulon Cookware by Fabulous Faith.

Ingredients:

1 - 5 quart Circulon covered dutch oven

1 - 5 pound Sirloin Roast
2 tbsp. Olive Oil
2 tsp. freshly ground black pepper
2 tsp. dried thyme
1 tsp. salt
1 tsp. garlic powder 

2 medium sized sweet potatoes
4 carrots, peeled and halved
6 cloves of garlic, whole
1 - 12.5 oz. jar of spicy pickled mushrooms
1/4 cup dry red wine

Instructions:

Preheat your oven to 375 degrees.

Combine the salt, pepper, thyme and garlic powder in a small bowl.

Season the roast liberally on all sides and gently press the spices into the meat.



Heat your Circulon 5 quart covered dutch oven on the stove-top over medium high heat.  Add the olive oil and swirl gently in the bottom of the pan. 

Brown the roast for 4 minutes and then turn, continue to brown on each side for 4 minutes until all sides are brown to form a dark crust of spices on the outside of the roast.


Prepare the carrots, sweet potatoes, mushrooms and garlic while the roast is browning.



Slide the roast into the middle of the pan and arrange the vegetables around the roast.   Pour the wine over the vegetables and place into the oven and bake for 2 and a half hours uncovered.



Remove the roast from the oven and cover with the lid.  Allow to sit and rest for 45 minutes covered.

Remove roast from pan and arrange on platter with vegetables, pour gravy into serving dish.

Slice roast and serve as desired.

Recipe yields 4 - 6 servings, plus generous leftover roast beef.
