Fabulous Faith presents - A Culinary Workshop with Chef Selwyn Richards at Vaughan Carifest 2014



On Friday August 22nd I was invited to attend the VIP thank you dinner and Caribbean culinary workshop at Carifestival in Vaughan. 

I arrived at the venue Woodbridge fairgrounds, a local historical site famous for hosting elegant garden parties, movie productions, art and craft shows, garden markets and numerous cultural festivals since the 1880s.

 As soon as I stepped out of my car I was overwhelmed by the delicious aroma of smokey grilling jerk chicken.  I turned and headed towards a large elegant white tent that was decorated to match the Caribbean theme.  A buffet of 5 star hors d’œuvres was presented including enchanting tarts filled with ackee and saltfish, shrimp shot glasses, smoked salmon bites and an array of exotic fresh fruit that tantalized the pallets of the lucky guests upon arrival.  

 
Chef Selwyn Richards, from Jamaica, a chef with over 25 years’ experience catering here in the GTA was just off center stage.  He demonstrated his recipes and provided instructions on how to prepare traditional Jamaican dishes, Escovitch fish a tangy fish stew with peppers, onions and carrots, the ever popular jerk chicken and rice and peas.  

Our senses were excited as delicious aromas filled the tent and Chef Selwyn’s pleasant personality engaged the crowd with witty humour.  Chef Selwyn personally served the guests after his cooking lesson and the crowd was thrilled with his recipes.   

 
Special thanks to Karen from the CariFestival Association for the invitation and to Chef Selwyn Richards for the delicious supper.   CariFestival is a two day festival devoted to celebrating Caribbean cultures in the City of Vaughan. The objective of CariFestival Association is to showcase the best of the Caribbean culture, demonstrate Caribbean artistry, and generate revenue to fund other Association programs and services throughout the year, to support local charities and to contribute to the community infrastructure.
